500g beef rump steak

60g bean thread noodles

1 Lebanese cucumber (130g)m halved lengthways, seeded, sliced thinly

100g cherry tomatoes, quartered

1 small red capsicum (150g), sliced thinly

3 green onions, sliced thinly

1/3 cup firmly packed fresh coriander leaves

1/3 cup firmly packed fresh mint leaves

Thai Dressing
-
1/4 cup (60ml) lemon juice

1 tablespoon fish sauce
-
1 tablespoon brown sugar

1 tablespoon peanut oil
How to make Thai Beef Salad for kids:

Cook Beef in heated oiled larg pan until browned on both sides and cooked as desired. Cover; stand 10 minutes then slice beef thinly.

Meanwhile, place noodles in large heatproof bowl, cover with boiling water, stand until just tender; drain. Using kitchen scissors, cut noodles into random lenths.

Make Thai dressing

Return noodles to same cleaned bowl with remaining ingredients and dressing; toss gently to combine.
