Sweet soy chicken with Noodles:
Kecap mains is an Indonesian sweet soy sauce that is available at most supermarkets and Asian-food stores. We used hokkien noodles in this recipe but any fresh wheat noodle such as shanghai can be substituted.

500g hokkien noodles.

1 tablespoon peanut oil.

750g chicken thigh fillets, sliced thickly.

8 grean onions chopped coarsely.

4 gloves garlic crushed.

2 cm piece fresh ginger (10g) sliced thinly

230g can sliced water chestnuts, drained

300g choy sum, chopped coarsely

2 tablespoon coarsely chopped fresh coriander

2 tablespoons kecap manis.

1/4 cup (60ml) chicken stock
How to make Sweet soy chicken with Noodles for kids:

Place noodles in medium heatproof bowl, cover with boiling water, separate with fork; drain. Cover to keep warm.

Heat oil in wok; stir-fry chicken in batches until browned all over. Return chicken to work with onion, garlic, ginger and water chestnuts; stir-fry until fragrant.

Add choy sum, coriander, kecap manis and stock; stir-fry until chicken is cooked through and choy sum just wilted

Serve noodles topped with chicken mixture.
