Stuffed Paratha
You will need ..
For the dough

½ cup whole wheat flour, plus a little extra for dusting.

½ tsp salt.
-
1 tsp oil.
-
Lukewarm water for kneading the dough
For the Stuffing
-
One large potato- boiled and mashed.

½ tsp salt .
-
½ tsp chaat masala.
-
½ tsp coriander (dhania) powder .
How to make Stuffed Paratha
For the Dough:
Sieve the flour into a mixing bowl and add the salt. Mix oil into the flour. Slowly add lukewarm water and start to mix the dough. The resultant dough should be a firm dough (not as soft as that used for chapattis). Kneed it well; cover and leave it for 20 minutes.
For The Parantha:

Divide the dough into 2-3 equal sized balls.

Roll out each ball into a circular shape about 4 cm in diameter.

Place 1 heaped tbsp of the filling mix in the center of one circle. Fold the edges to enclose the filling, and on a well-floured surface, roll each ball into a bigger, round shape.

Heat a non-stick frying pan. Put the parantha onto the heated pan and cook for 1 minute on medium heat until small bubbles appear on the surface. Turn over and cook the other side for 1 minute.

Rub the surface with a little oil or ghee and turn it over. Using a heavy spatula, press down evenly over the parantha. Fry it like this for 1 minute. Repeat the same for the other side until the parantha is golden and crisp. Serve warm.
