Rice paper rolls
How to make Rice paper rolls:
You will need twelve 17cm-square rice paper sheets for this recipe.
Thinly slice ½ Lebanese cucumbers and ½ medium carrot into ribbons. Combine with 2 tablespoons hoi sin sauce, 1¼ cups finely shredded barbecue chicken and 50g thinly sliced snow peas. Place a sheet of rice paper in bowl of warm water until just softened; lift from water, place on tea-towel-covered board with a corner point towards you. Place a tablespoon of chicken mixture horizontally in centre of paper. Roll sheet to enclose filling, folding in sides as you go.
