Porridge with apple and pear compote


You can make the vegetable filling a little ahead of time, but only make the omelettes just before you want to serve them. We used button mushroom for our omelettes, but can choose any variety you like.

You will need ..

  • 3½ cups (875ml) hot water

  • 1½ cups (135g) rolled oats

  • ½ cup (125ml) milk

Apple and pear compote

  • 1 large apple (200g), chopped coarsely

  • 1 medium pear (230g), chopped coarsely

  • ⅓ cup (80ml) apple juice

  • 1 tablespoon lemon juice

How to make Porridge with apple and pear compote:

  1. Make apple and pear compote.

  2. Combine the water and oats in medium saucepan over medium heat; cook, stirring , about 5 minutes or until porridge is thick and creamy. Stir in milk.

Serve topped with apple and pear compote

Combine ingredients in medium saucepan; bring to a boil. Reduce heat; simmer, covered, stirring occasionally, about 15 minutes or until fruit softens and liquid is absorbed.

Serves 4: Per serving 4.2g fat; 853kj (204 cal)

to prepare porridge in a microwave oven, combine the water and oats in large microwave-safe bowl, cover; cook on high (100%) for 3½ minutes, then pause and stir. Cover; stand 5 minutes, then stir in milk.
