Pasta and Chicken Salad:
Penne is an Italian word for old-fashioned quil pen, a tool which this ridged macaroni, cut into short lengths on the diagonal, resembles. You can use any small pasta-macaroni, fusilli or farfalle –that you like instead of penne.

600g chicken breast fillets

250g penne
-
1 large red capsicum (350g), chopped coarsely

4 large egg tomatoes (360g). seeded, chopped coarsely

6 green onions, sliced thinly.

200g piece feta, chopped coarsely

80g baby rocket leaves
Vinaigrette

1/4 cup (60ml) olive oil.

1/3 cup (80ml) red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon sugar
How to make Pasta and Chicken Salad for kids:

Place chicken in medium saucepan, cover with boiling water; return to a boil. Reduce heat; simmer, uncovered about 10 minutes or until cooked through. Cool chicken still in poaching liquid, 10 minutes. Remove chicken from pan, slice thickly; discard poaching liquid.

Meanwhile, cook pasta in medium saucepan of boiling water until just tender; drain. Rinse under cold water; drain.

Make vinaigrette.

Place chicken and pasta in large bowl with remaining ingredients and vinaigrette; toss gently to combine

Vinaigrette: Place ingredients in screw-top jar; shake well.
