Honey-roasted muesli
You can make the vegetable filling a little ahead of time, but only make the omelettes just before you want to serve them. We used button mushroom for our omelettes, but can choose any variety you like.

¾ cup (60g) rolled oats

½ cup (55g) rolled rye

½ cup (55g) rolled rice

¼ cup (15g) unprocessed wheat bran

½ cup (175g) honey
-
1 tablespoon vegetable oil

1/3 Cup (40g) coarsely chopped walnuts

¼ cup (40g) pepitas
-
1 teaspoon ground cinnamon

1/3 cup (50g) coarsely chopped dried apricots

1/3 cup (30g) coarsely chopped dried apples

¼ cup (40g) raisins
How to make Honey-roasted muesli:

Preheat oven to moderate (180°C/160°C fan-forced)

Combine oats, rye, rice and bran in medium baking dish;

Drizzle evenly with honey and oil. Roast, uncovered, 5 minutes;
Stir, roast, uncovered, further 10 minutes.

Remove from oven; stir in remaining ingredients. Serve with milk or yogurt.

Honey-roasted muesli Tips:
You can double or triple the quantity of ingredients and store muesli in an airtight container in refrigerator for up to three months. The muesli is delicious topped with fresh seasonal fruit.
