Buttermilk pancakes with glazed strawberries

4 eggs

2 tablespoons caster sugar

1½ cups (375ml) buttermilk

100g butter, melted

1½ cups (225g) self-raising flour

Glazed strawberries

⅓ cup (80ml) water
-
½ cup (170g) marmalade
-
1 tablespoon caster sugar

2 tablespoons lemon juice
-
250g strawberries, quartered
How to make Buttermilk pancakes with glazed strawberries:

Beat eggs and sugar in small bowl with electric mixer until thick; stir in buttermilk and half of the butter.

Sift flour into large bowl; whisk egg mixture gradually into flour until batter is smooth.

Make glazed strawberries

Heat heavy-based medium frying pan; brush pan with a little of the remaining butter. Pour ¼ cup of the batter into pan; cook, uncovered, until bubbles appear on surface of pancake. Turn pancakes; cook until browned. Remove from pan; cover to keep warm. Repeat with remaining butter and batter.

Serve pancakes with glazed strawberries.
Glazed strawberries Place the water, marmalade, sugar and juice in small saucepan; bring t a boil. Add strawberries, reduce heat; simmer, uncovered, about 2 minutes or until strawberries are hot.
