Besan ki Burfi
You will need ..

250 gm (2 ¾ cups) gram flour (besan).

150 gm (1 ¼ cup) powder sugar.

150 gm ( ¾ cup) pure ghee
-
Seeds of 3-4 green cardamoms (chhoti illaichi)-powdered.
How to make Besan ki Burfi

In a heavy bottomed kadhai, put besan. Dry roast besan for about 10 minutes on low heat, stirring continuously till fragrant and gives out a roasted smell.

Add ghee. Cook on very low heat for about 15 minutes till the besan turns golden. Do not make it brown. Make it just golden with a hint of brown.

Remove from fire. Add sugar and mix well.

Transfer to a greased thali. Press well to make the top smooth.

Sprinkle illaichi powder. Leave to set for 5-6 hours at rooms temperature in a cool place but not in the refrigerator. You can leave it over night to set well.

Cut into 1 squares and store in an air tight box after it turns absolutely cold.
